Recipe: Classic English Toffee

1 cup unsalted butter (the real stuff! Oh, and you can use salted, just omit the added salt)
1 cup sugar (the real stuff!)
1/8 tsp salt (optional)
2 tsp water
1 tsp vanilla
salted nuts (optional), chopped
1 cup semi-sweet chocolate chips

Melt butter on low heat, then add sugar and water. Using a candy thermometer, cook mixture on med-low until candy reaches 300 degrees (hard crack), occasionally giving the mix a stir. While you are waiting for the candy to reach this temperature, sprinkle a piece of parchment with the salted mixed nuts. Measure out chocolate chips and have them ready to sprinkle onto the hot toffee.

When toffee mix reaches 300, pour over nuts. Sprinkle surface with chocolate chips and let sit for about five minutes. With a spatula, smooth the chips as if frosting the toffee. Let toffee cool completely.

Note: There are so many variations of this classic toffee recipe. Please try them all. Sprinkle crushed candy canes on top. Use white chocolate instead of semi-sweet, sliced almonds instead of salted nuts. . . The possibilities are endless.

  2. My husband loves Fruit & Nut Spice Rounds, but I lost the cookie recipe in the midst of our four moves and haven't been able to find it the myriad of boxes (still) in our basement or on the internet. If any of you all have something like this, let me know!

  3. We have SO many favorites! My kids especially love when I make reindeer poop. LOL! Don't worry, it's just peanut butter cereal mixed in melted chocolate almond bark.

    Another variation is snowman poop--just mix coco puffs in melted vanilla almond bark. Delish!

    And not just one kind of it but two.

    I am seriously wondering if we should feature this one next Tuesdays. Just so you can purge yourse- oh, bad word choice. Just so you can cleanse yoursel- oops, did it again.

    Perhaps we should post those recipes and do a contest to rename these, uh, lovely sounding concoctions to something a bit more respectable.

    We could even do a prize. How about a book giveaway with some goodies tossed in? Or a fun, practical, book/writer-lover gift from Levengers? Or. . .Hmmm . . .

    Well now, that doesn't sound right at all. ;-)
