Recipe: Healthy Corn and Black Bean Salsa


This is supposed to be a *writing* site, not a recipe haven. But every writer needs a break, right? And every writer needs to eat. So just think of this as a healthy recipe for writers who need to take a break. There. Now I'm writing related.

Oh, and there might be a contest opp too. . .


Black Bean & Corn Salsa

2 cans Corn (15 Oz.), Drained
1 can Chopped Chilies (4 Oz), Drained
1 can Chopped Jalapenos (4 Oz), Drained (variation below)
2 can Black Beans, Drained And Rinsed
1 whole Red Bell Pepper (Chopped)
1 bunch(es) Scallions, Chopped
1 cup Sour Cream
1 bag Finely Grated Mexican Cheese (8 Oz)
½ bunch(es) Fresh Cilantro, Coarsely Chopped (or To Taste)

Throw everything together, except jalapenos, and let it marinade overnight. Placed sliced jalapenos on top before serving. This way they are easy to remove for those who are faint of heart. didn’t add any salt to the recipe mainly because the chips that you use for dipping will be salty enough, imo.

Since I just got a box of my latest historical romance that releases next month, Promise of Time (Gettysburg, PA), a book goes to the person who can give the healthiest, easiest, tastiest, five ingredient or less recipe for this poor, sit-on-my-soft-spot-all-day writer. I'll try them all and pick the best so PLEASE SHARE! (Because a trip to the store is probably inevitable, I'll announce the winner Saturday. Sound good?)

  1. How about some HOMEMADE FLOUR TORTILLAS to go with that salsa?

    4 c. flour
    2 heaping tsp. baking powder
    2 (or less) tsp. salt
    1/2 cup Crisco
    1 1/2-2 c. boiling water

    In large bowl add dry ingredients and stir. Cut in Crisco with a pastry knife. Gradually add water and stir with a large spoon. Add enough water to make a soft warm dough that is not sticky. Dust with flour and knead until dough is smooth, or for about a minute.

    Divide dough into 10-15 small balls. Let rest for 5 minutes. For tortillas, heat on medium high heat a large cast iron or no stick skillet. Using a rolling pin, roll each ball into a thin round tortilla and lightly brown each tortilla on both sides. Stack hot tortillas on a kitchen towel, one on top of another. Serve warm with beans, or butter, or peanut butter and jelly, or whatever you like on bread.

    BONUS: For Sopapillas: If you are making only Sopapillas - to dry ingredients add 2-3 tablespoons of sugar. This will make a sweeter dough. Heat a skillet, add oil so that the skillet is 3/4 full. Roll each ball into a very flat round shape. Cut into thirds. Fry each side in hot oil. If dough is right thickness and oil is hot the sopapillas will puff up.

    Fry unto golden brown on both sides. Serve warm with sugar or honey. Let oil cool and save to use for next time. Strain if desired to remove dough particles.

  2. Oy! Sounds delicious. This is what I love about 5 ingredients or less-simplicity. Although I'm sure someone will notice that *my* recipe includes, like, way over 5 ingredients. Math was never my strong subject.

    Hummus recipes anyone? I'm just not brave enough to try the stuff, but if you've got something to wow me, then post it and then I'll have to try it.

  3. Here's one of my favorites:

    Crock Pot Lasagna

    6 1/2 cups cooked egg noodles
    1 1/2 lbs. ground beef
    2 1/4 cups bottled spaghetti sauce
    6 oz. Velveeta cheese (cubed)
    12 oz. mozzarella cheese

    Brown ground beef in a skillet and drain excess fat.

    In crockpot, layer as follows:
    1/3 spaghetti sauce, 1/3 noodles, 1/3 meat, 1/3 Velveeta, 1/3 mozzarella.

    Repeat layers until all ingredients are used. Cook on low for 4 hours.

    Serve with a tossed salad, and you have dinner! (I have to admit, though, I put more cheese than the recipe calls for.)

  4. Now that will be a favorite, Sandra! I've definitely got to try it. I especially love that it cooks in a crockpot! Any woman who works outside the home must learn to hug their crockpot daily. And five ingredients! Splendid!

  6. With the battle of the bulge being raged at my house, I've looked for things to replace other things in well-loved recipes. Here's one of my favorites which is a twist on 2 others: tuna & noodle casserole and green bean casserole.

    I do tuna & green bean. Add the mushroom soup to a can of tuna, gently mix with green beans. Top with French-fried onion rings and bake.

    Voila! Only 4, count 'em ... 4 ingredients. The calories form the pasta is missing. Okay, I'll give there are a few in the soup and onion rings, but not nearly as many as with the noodles. ;)
